As long as the radiator isn't pushed to its limit, the thermostat will open and close to limit the temperature. Obviously if the thermostat is open and the temps keep rising during hard runs, then you need a better radiator. But I never understood why people would get bigger radiators and claim it makes their engine run much cooler during normal driving. Either they put in a lower temp thermostat, or the thermostat they have isn't working right. For instance, if someone has a stock 180 degree thermostat and they got an aftermarket radiator, their coolant temp should never drop below 180 degrees no matter how big their radiator is. The thermostat opens and closes to regulate the temp.
